So today, I woke up and didn’t know what to make for breakfast.. I decided on banana pancakes, but once I started to mash the bananas I decided that I wanted something else.. So what did I make? Well check it out!

Paleo Banana Two-Minute Breakfast Muffins
(Makes 2 muffins)

Ingredients:

For Muffin

1/3 cup almond flour
1/4 tsp baking soda
1 ripe banana
1 egg
1 tbsp almond milk
2 tbsp raw honey
1 tsp vanilla extract
cinnamon to taste (~ 1-2 tsp)

For Topping
1 cup frozen berries
1 tbsp raw honey

Directions:

Mash banana in a mixing bowl. Add egg, cinnamon, vanilla, honey, and almond milk. Mix. Then add the almond flour, and baking soda. Mix.

Divide mixture into two microwave save bowls (at least 2cups in size), that have been pre-greased with coconut oil.

Note: It won’t look like much is in there, but they will rise like crazy!

Put ONE of the muffins in the microwave for two minutes.

Meanwhile, put frozen berries in a sauce pan and put on medium heat. Allow berries to thaw. Once thawed, add honey. Mix, then remove from heat. (The topping will take about 5minutes in total, depending on your stove type.)

Top muffin with berry topping and enjoy!
