Sneaky Sneaky..

So remember a bit back how I wrote about how sometimes eating healthy really stinks?! That I really need to trick my mind into eating whatever I brought for lunch because it sounds just too dang healthy?! Well, truth is sometimes I still need to trick myself into eating veggies.. Let’s take a closer look.

The other day I made some of my First Time Curry (though not first time anymore) and it happened to be a vegetarian version. Well, despite that, when I was at the grocery store before I made it I was trying to figure out what to put in it so that I got some veggies in the meal too. Now that I’m more conscious of what I put into my body, I feel like I need to make sure that veggies make it into every meal.

My First Time Curry had tomatoes, yes, but that didn’t seem like enough. Not to mention that in my book, beans and chickpeas don’t count as vegetables. So golly, what was I going to do?

I decided to stop in the frozen food aisle to grab a frozen veggie mix, one with peas, carrots, green beans, and corn. Honestly, I didn’t really know what I wanted, but I knew that I didn’t want one with only peas. To give credit where credit is due, I actually got the idea from Lindsay at The Lean Green Bean who makes her veggie mac which always looks AMAZING.

So I decided to be sneaky and add half of the veggie mix into my curry. I mean, I enjoy mushrooms so I added a whole container of those, but I just wanted it to be veggie packed without having to add a ton of veggies that I just don’t like.

Sneaky Sneaky. Seriously. Sometimes I feel like I’m the mother AND the child. “Tricking” myself into eating veggies.

Example two of how I’m both mother and child. I’ve been making these smoothies for breakfast lately. When I go to the gym in the morning it’s really nice to have a good breakfast afterwards. Another give credit where credit is due, my roommate was doing this for awhile (and sometimes still does).

Anywho. I said on Wednesday how I made a smoothie consisting of 1 c frozen fruit, 1 c spinach, 1 c unsweetened almond milk, 1 scoop light vanilla creme muscle milk, and 1 scoop vanilla Herbalife Formula 1.

Did ya see it? Did ya see it?! SPINACH! I’m sneaking spinach into my breakfast smoothie! Yes yes, I’ve been doing this for a while, but it’s sooo different doing it for breakfast! I mean seriously. Spinach for breakfast?! Who woulda known!

So there you have it folks. Not only do you now know that sometimes I think eating healthy sucks, but I also have to sneak veggies into my meal as a mother would for her child.

    • Exactly why I have to be sneaky about making my food.. I’m just NOT a vegetable eater no matter how hard I try.. Though I am planning on getting some Brussels at CostCo tonight since those are my FAVORITE!

      • How do you like your Brussels sprouts? I made this recipe out of a Clean Eating mag that had roasted Brussels sprouts, sweet potato, and one other vegetable in it. They were seasoned with cumin, chili powder, and cinnamon! It was good.

      • Try oven roasting them with olive oil and spices. You’d probably like that too! I wrap asparagus in bacon and put that in the oven with some garlic powder and maple syrup. It’s sweet and spicy at the same time! With BACON!
