Whole30, Half Training, & Chocolate

FRIDAY! So, I’m up north with friends enjoying the weekend, but I made sure to write this post before so you wonderful people would have something to do to pass the time at work on Friday.. Oh, you know you all do it! Why else would we all follow blogs? čśë

Always, let us start by checking out some PALEO Chocolate Covered Strawberry Cupcakes from a guest post over at PaleOMG! The post was by Adriana from Living Healthy With Chocolate! SO make sure to show her some love in thanks for this delicious-droolable cupcake!

And per usual, let us get onto Five Facts Friday..

1. I’ve finally finished It Starts with Food and will be starting my Whole30 this Sunday! You see, I’m up north until tomorrow morning-ish and we have friends in from Florida and didn’t want to give up on a fun weekend (the drinking part) by starting Whole30 before the weekend was done.. So why Sunday? Because everyone ALWAYS starts on Monday, but I don’t want to give myself another day to eat bad foods just because I’m starting the Whole30 the following day! (Want more information on Whole30 without reading the book, check it out here.)

2. I’m officially half marathon training! Craziness! Well, not really crazy, but it’s going to be a fun time. I love running and I’m looking forward to the long run runners high! I’ve actually decided to do an 8 mile training run on the Woodstock Run trail on Sunday! Seeing as 8miles is twice as long as my run on Sunday is supposed to be, it’s going to be a very slow, enjoy nature, type run.

3. I’ve also realized that I train/workout better when I have an event planned.. So along with the half in September that I’m going to do, I’m planning on doing another one on Nov 9th. I haven’t signed up for that one yet (found it on Wednesday), but I’m excited!

4. HGTV is my guilty pleasure.. I’m watching it as I type.. Well, more I watch it then remember that I’m trying to write you fabulous people a post and start typing again.. I love watching them re-do houses.. Property Brothers & ┬áIncome Property FOR THE WIN! Oh, speaking of guilty pleasure TV shows.. SHARK WEEK ANYONE?! Yup, definitely pulled me in a few times this week!

You know.. when I wrote the title I was definitely thinking of it spoken like those Monster Truck commercials.. You know.. like these ones!

Well, in Friday fashion.. let us start with a delicious cupcake to drool all over our keyboard for!! Look at those beauties! Mini Pumpkin Pie Tarts from Danielle over at Against All Grain! Make sure to head over to her website to show her some love.. NOT TO MENTION that her new cookbook is coming out soon! You can pre-order it on Amazon!

Now onto the random things that have been circling my mind all week..

1. I eat WAY too much nut butter! Yes, it’s true! I got some awesome NuttZo from a giveaway and I had to toss the last third of the jar because I was eating WAYY too much with a spoon.. Normally I’d just go with it, but I’ve noticed that lately I haven’t been feeling 100% (headaches for dayyysss!) and I honestly think that nuts might be playing some part in it..

2. I went on my first nature run in FOREVER last weekend! Since I raced on Sunday, when I headed to my sister’s house on Saturday I decided to stop off at a Michigan State Park to do a nice nature jog.. Just 20 minutes, but it was beautiful… I parked by the lake and ran away from it (up the dirt road) then back to it.. it was breathtaking!

3. I FINALLY found farm fresh eggs! I’m sure they were at the farmer’s market last week, but I didn’t see them.. So I was ecstatic to find them this week! You can’t find a better deal, $3 for a dozen eggs that are FARM FRESH! I was paying about $6.50 for two dozen organic eggs at CostCo, but Farm Fresh>>>>>Organic anyday!

4. Thursday was spent waiting on a reaction and looking through YouTube videos to see what country sounds I need to DL.. I made a pretty decent list!

5. I LOVE BRUSSELS!! I got a two pound bag from CostCo for $3.99 a week back and finally made some Thursday night.. DELICIOUS! Just brussels, cooked in coconut oil, drenched in balsamic vinegar! YUM YUM YUM!!

Oh.. and I know this goes against the “five facts Friday”.. But I’m heading to a race track (horses) with my boyfriend and some of our friends tonight! I cannot wait! $1 hotdogs, $2 beers, and $2 minimum bets! I probably won’t bet, because I’m not a big gambler (my mom and I can use the ‘free money’ at the casino and play for hours.. which we’ve done on many occasions), but the cheap food & beer will be nice.. Well, minus the stomach ache afterwards.. but we’ll try not to think about that right now!

Friday Funday!

So this week has been interesting for my! Essentially my whole lab is at a conference which means that I’ve been working by myself.. So I’ve finally felt like a real graduate student.. and that’s scary!

But we’ll get to that in a second.. First lets check out a DELICIOUS looking paleo cupcake! This one compliments to Clean Eating With A Dirty Mind! Beautiful German Chocolate Cupcakes!

Seriously, if someone wants to make me some of these I will NOT say no!

Alright.. now onto Friday Funday! Also know as, five things that have had my interest/are interesting to me, as of late.

1. I made my own salsa before I went up north of the 4th of July.. Sadly it wasn’t spicy enough.. So when I returned home I had about 10 more ripe jalape├▒os, so I took the salsa I had left and added about 7 of them.. yea.. not to toot my own horn, but it’s DELICIOUS!!

2. THE POOL AT MY SCHOOL IS CLOSED UNTIL THE END OF AUGUST!! I seriously about died when I read the sign.. and cried.. it didn’t help that that was a rough day for me anyways, but seriously, NO POOL?!?! UGH! Guess that means more open water practice for me!

3. My lab space at work is beautiful.. I’m a bit OCD! My lab mates are alway jealous of how clean my space is, but I keep trying to tell them that having OCD (even if just a little bit) isn’t always the best thing… oh well, at least everything is clean and pretty!

4. I made some DELICIOUS ‘pork and vegetable’ soup on Tuesday! I was pretty proud of myself, mostly because it meant that I had food for days! Not to mention that I did it all in the crockpot which means that I didn’t need to slave over the stove, and in this hot Michigan weather, that’s always a good thing!

5. I FINALLY went to the farmer’s market that my school has on campus and scored four zucchini’s and a small cabbage for $3!! Yes, you read that right.. THREE DOLLARS!! Now I know that every Wednesday I need to have about $10 in cash on me so that I can go grocery shopping!! BOOM!

Well, that’s that! This weekend I’ll be going to my nephew’s birthday party on Saturday then racing on Sunday! Be sure to stop by on Sunday to read about the race!!

Have a great weekend everyone!!
