Easy Paleo Coleslaw

So despite the fact that we really haven’t been having ‘summer’ weather the past few weeks in Michigan, it IS summer! So that means that we have some fabulous produce from the farmer’s market that needs to be put into delicious dishes.. Not to mention that it’s nice to have delicious light side dishes when you’re cooking out, etc.

Well a few weeks ago I went to the Farmer’s Market and they had a coleslaw that I was very skeptical about.. Also, trying to follow a paleo lifestyle I had to look at the ingredients (well, that and most coleslaws have some type of dairy in them, and I cannot do dairy). Luckily for me, it was paleo friendly!

So, I’m making this to take up north with my boyfriend and our friends. We’ll be grilling all weekend, and I want a healthy side dish that isn’t potatoes or potato chips! So this side dish will allow me to have a healthy, pre-made dish to add to my plate. Not to mention that I don’t have to worry about turning on the oven to make it! Definitely a plus in the summer!

Alright, enough about talking about the recipe.. Let’s just get to it.

Easy Paleo Coleslaw

 

Ingredients

1/2 head of cabbage (green or red, but I enjoy green red), cut very thin
2 handfuls of baby carrots, shredded (or three big carrots)
1 apple, shredded (whatever you have will work)
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice (or juice of one lemon)
Seasoning (optional): ginger or cinnamon

 

Directions

Place the vegetables together and mix, then add the EVOO, lemon juice, & seasoning and mix. Serve chilled.

What have I been up to?

So I feel like lately all I’ve been doing is talking to you guys on Wednesday and Friday. Well, I decided that I needed to check in with you guys to know how my training/eating is going outside of WIAW and Friday Facts.

So, let’s start with training! If you follow me on Instagram (DetroitHealthy) or on Twitter (@DetroitHealthy) you’d have seen that it’s been going great! Running, swimming, and cycling! Obviously. I mean that’s what triathletes do, right?! I have decided that I need to start going to the gym again to lift. Not at lot, but some to start to get more muscle definition again. I was doing so well for a while, but then I stopped. So yea, tomorrow I’m going to start going again. Even if it’s just for an hour in the morning to lift and do abs before heading into work.

Other than that, following my training plan on TrainingPeaks is perfect! Sometimes it’s easier to be told what to do than to have to think it up all by yourself! I mean, check out what I did last week!

My next race is June 16th the Motor City Triathlon! Don’t worry, I’ll hear about it more before and get a full race recap after! =]

So the next thing that I wanted to tell you guys about is my plans to have a garden this summer!! YAY! So, you all know that I’ve been paleo since February, but this summer I’m going to take it to almost a level of insanity by having my very own garden! Ok. I’m honestly SOOO excited it’s not even funny! It’s going to cut down on food costs in the summer (and the winter too since my sister is going to help me can some of my crop!!) AND it gives me a reason to HAVE to be outside during the week! STOKED!

A friend and I are moving at the beginning of June to a little house around the Ferndale area. LUCKY for us, there is enough grass in the back that we’ll be able to have some small Square Foot Gardens!  I’ve planned mine out to be 6′ by 3′. I’m sure she’ll have one about the same size! (Side note: this little place means that I FINALLY get to bring my dog to live with me! My mother is overly excited about that!) So check out what I have planned!

Awesome right!? I know that I’m going to be SO proud of my  little garden! Plus my boyfriend is excited about it because he loves fresh tomatoes! Honestly I don’t really like tomatoes unless they’re in a soups/stew or something like that. He’s convinced, however, that I’ll love fresh ones. So I’m going to give them a shot! The grape tomatoes are for him, where as the bigger ones are for me to can or use in stews. I guess he’ll also get some for sandwiches. Yes, I know, I’m such a nice girlfriend aren’t I? =]

But honestly, I just want to move into our new place now so I can get my garden planted! I have to buy the wood and stuff to make my garden first however. Since we’re renting this place I figured I’d make it a raised bed garden, which is how I came across the term “square foot gardening” in the first place. I could go on and on about how excited I am to have a garden AND to get to can my OWN vegetables! But I won’t bore you with the details until I have a post dedicated to them.

Facts Friday Five FUN!

So I guess it should be “Five fun friday facts” (can you say alliteration?) but that’s not nearly as fun! I love Fridays because I get to tell you guys the crazy ridiculous things that are happening in my life, or the things that I’ve been obsessing over the last week.. Well, lets check it out.

 

1. Last weekend I made my very first batch of raw cashew butter! If you’ve been keeping up with me you’ll know that I’ve realized that when I eat nuts my face breaks out (zits, not hives.. at least not hives that I’m aware of!) and it’s just no bueno. So therefore, this was my first and last batch of raw nut butter for a while.. Sad, but sometimes you gotta do what you gotta do.

2. Since Fun is in the title, I should mention how OBSESSED with Fun. I am!! The lead singer has the voice of.. I don’t know.. but it’s wonderful.. WAIT A SECOND.. You don’t know who Fun. is? Alright, let us fix this.. Some of my favorite songs are Be Calm (this is the one that made me fall in love with them a few years back!), Some Nights and Just Give Me A Reason. The last two being the ones that you probably hear on the radio time and time again!

 

3. Campus is starting to look BEAUTIFUL! Luckily for me one of the sidewalks I normally take is closed in the mornings (darn summer construction) so I got to snap a picture of these beautiful trees on my walk into school. Oh, and I think the whole campus smells like Lilacs.. yea. it’s wonderful! =]

4. I’ve started drinking my coffee black again. I know that coffee “isn’t paleo”, but hey you have to pick your battles and one with caffeine is NOT one that I’m willing to lose. Brittany not on caffeine is NOT a pleasant person to be around.. Promise. Plus for a while I was using some SO Delicious Coconut Milk Creamer but then I realized that I couldn’t pronounce some of the stuff on the side of the carton (which is saying something seeing as I’m a chemist) and decided that it was time to say goodbye to the chemicals.

 

5. Last but definitely not least, I wanted to welcome the new followers! Healthy In Detroit is up to 60 followers! Seeing as I figured I’d be happy if I had 20 I’m overjoyed to see that 60 people like to read about my ridiculous/crazy/active/delicious life! So WELCOME and Thank you everyone for putting up with me!!
