Have you realized that it’s been WEEKS since I’ve done a WIAW? Seriously, I checked and it’s been like three weeks or something!! You guys have probably been so sad that you haven’t been able to see what I’ve been eating! I’m so sorry!
Yea, yea.. I’m exaggerating, obviously. Well, about the fact that you’ve missed it, not that it’s been three weeks.. It really has! But anyways, before we have a run down of my Tuesday, let’s head over to Peas & Crayons to thank Jenn for hosting this party every week! Oh, and congratulate her on her little Chickpea.
some a lot of coffee and some Breakfast on the go at school.
Lunch was some chicken & veggies I made the night before.. Sometimes I like prepping my food! 😉
Ended up going to the gym at school since I was waiting on a four hour reaction, got my sweat on.
Then followed it with a Banana Nut Muffin Quest Bar.
I FINALLY got to go home at 7:30pm from work.. Decided to make something fast: Pumpkin oatmeal & an apple.
Simple eats, but delicious nevertheless! =]
So, if you follow me on Instagram you saw that my mom gave me some HUGE zucchini from her garden.. I needed something to do with it so I decided (thanks to my mom) that I should stuff it! So, here’s my recipe for stuffed zucchini!
Two Zucchini- cut into fourths with the middle scooped out.
One Onion- diced
One pound meat (I used Venison Sausage)
1-4oz can green chilis
1-14.5oz can diced tomatoes
Preheat oven to 350 degrees.
Add olive oil to your pan and add the onions until translucent, then added chilis.
Add the meat and brown until thoroughly cooked.
Drain the tomatoes then add to the mixture, allow to simmer for a few minutes (5 should be good).
Drain the meat mixture if needed then scoop the mixture into the zucchini, place on a baking sheet then place in the oven for 45minutes.
Serve warm, pairs well with sweet potato. =]
So, as I already stated last weekend was NOT very paleo filled (I did cook some veggies), so sadly I can’t continue my “Art of Paleo Entertaining” WIAW’s.. Sad I know.. Because part 1 and part 2 were SOO delicious!
Well that’s ok.. Tuesday was full of delicious paleo eats and I couldn’t be happier! My body is honestly THANKING me for finally feeding it correctly! But before we see what I had to eat yesterday, I want to send a thank you over to Ms Jenn at Peas & Crayons for hosting this lovely party every week! THANKS JENN!
Two organic eggs scrambled, a granny smith apple with almond butter and coffee with some of my AWESOME paleo creamer!
After reading some It Starts With Food I had some ENERGYbits before heading to the pool (which was closed.. so then I headed to the gym).
Lunch.. Leftover grilled hotdog and a half, and some brussels!
Followed by a delicious gala apple!
After some lab work I decided to eat some carrots and smash some water.. I was more thirsty than hungry, and you can see that those carrots didn’t really help with the thirst.
Then after a long day it was nice to come home to this.. Crockpot full of a cut sweet potato, carrots, onion, tomatoes, pork, chicken broth, & some italian seasoning! Definitely had a bowl.. ok.. a bowl and a half! But the second half bowl was all carrots.. You see, I had left overs from the 4th that I hadn’t made (sweet potato and a pound of carrots) that I needed to do something with.. Then was born this delicious concoction!
THEN watched Enchanted and had another granny smith apple with almond butter! So so delicious!!
