WIAW#30: Snacks

First, let us thank Ms Jenn over at Peas & Crayons for hosting this fabulous party!

Now.. This WIAW is dedicated to the snacks that keep me going all day.. Let’s face it, I’m a snacker… I wish I wasn’t, but I am.. It seems that it helps me get through the day, especially since I’m on campus from roughly 8am-6pm most days.. So breakfast is at home, lunch is at work, then I snack all day.. so let us take a look at the things I actually remember to take pictures of before I snack on them!

New to my snacking list is celery & carrots with hummus. I went a full week with basically having this everyday! I need to start again, because it’s DELICIOUS! (oh, and healthy!)

Fat free cottage cheese! Also healthy! I love that it’s PACKED with protein! Definitely helps me get through the day when my stomach isn’t growling all day!

My absolute go to is an apple! I really don’t discriminate, I’ll eat just about any apple. However, my favorites are Granny Smith, Gala, and Fuji!

Quest bar and coffee! These have been a staple lately because I’ve been working on a presentation and that requires some midday caffeine! Plus the protein bar helps keep me full until dinner!

 

Not pictured (aka things I always scarf down before I remember to take a picture):
Banana (I try to eat one every morning as my morning snack!)
Jalapeno String Cheese — DELICIOUS!
Yogurt -If I don’t eat it with lunch then it becomes a snack for the day!

My Go-To Meal— WIAW #29

Until recently I wasn’t eating rice. Why? Probably because I was paleo for a while and rice is a no-no for many paleo peeps. Anyways, I wasn’t eating rice until recently when the boy and I decided that we wanted Chipotle for dinner.. LIFE CHANGER!

SO. For today’s WIAW I wanted to let you know what my go-to meal is.. which is what I had for dinner last night, and what I’m having for lunch today.

“Chipotle” Bowl

Ingredients
1/2 cup dry rice (cooked to yield ~1 cup of rice)
pinto beans
meat (depends on what I have, I’ve used chicken breast, chicken sausage, or what is pictured is italian sausage)
shredded cheese
salsa
guacamole

Directions
Put rice in bowl, top with beans, meat, cheese, salsa and guac. Enjoy!

And let’s be honest, I mix it up thoroughly before I eat it.. So it really looks like this…

So it’s Wednesday. FINALLY! Let us first start with thanking Miss Jenn over at Peas & Crayons for hosting this wonderful party every week! THANKS JENN!

 


So now onto what happened to me food-wise (with a bit of life splashed in) on Tuesday.

I started out the morning NOT wanting to get up and go to the gym. Well, luckily when I turned over and looked at my phone (specifically on Instagram) I saw that Lisa at Run Fast Mama had posted her workout and it was EXACTLY what I needed to drag my butt out of bed.  So I went downstairs into my basement and did a 30 minute circuit!

This was then followed by a coffee Herbalife shake which was DELICIOUS!

Then, as usual, I had a mid-morning snack which was medium sized Granny Smith apple. Per usual I forgot to take a picture.

Then was lunch time. 1/2 sweet potato, pork tenderloin, and some baked veggies.

Sometime after finishing my column (science-y stuff) at work I decided to have another snack. Hummus w/ celery and carrots, followed by half a Quest Bar.

Dinner was unpictured and some pizza.. How could I pass up pizza when my wonderful boyfriend called, said that it sounds like I had a long day, and that he had pizza if I wanted to come over for dinner!!!
